I don’t know about you guys, but it is hailing and POURING RAIN over here. My daughter just came in with a piece of hail and told me she caught a piece of the sky. How cute is that???

With Back to School coming up, I know, I know I mentioned it last week, I’m looking for any local business offering classes or activities for kids. I mean, that’s exactly what I’m doing right now, you know, to help save you time and make your life that much easier!

This week I’d like to share one of my favorite recipes, it’s a vegetarian black bean burger. I know a lot of people are now doing one vegetarian meal a week, so I thought I’d help out!

I’ve even served these to people who don’t like beans and some who are totally against vegetarian foods and they all loved them

I’m a rebel and rule breaker when it comes to following recipes, but for your benefit, I’ll stick at close to the original recipe as possible! If you’d like variations please email me. I'd include them here but this article would never end.

Black Bean Burger à la Julie

1/2 a medium onion

1/4 bell pepper, choose your color, it really doesn’t matter

2 (or more, I put like 5) garlic cloves

1 15 oz can black beans, drained and rinsed

1 tbsp pizza sauce

1 tbsp Italian seasoning

1 cup bread crumbs

1 egg

Olive oil, or oil of your choosing. I know coconut oil is super popular right now.

Directions

Coarsely chop onion, garlic and bell pepper, put in a 

put in food processor. I use my mini one, mostly because it’s easier to clean. If you don't have a food processor, you can use a blender. Blend until the chunks are reduced to tiny pieces but not too much, it’ll be really liquidy and your burgers might fall apart.

Add pizza sauce, Italian seasoning and half of the black beans. Blend until it has the consistency of guacamole.

Transfer to a medium mixing bowl, add bread crumbs, egg and the rest of the unsmashed beans. I use my hands to mix it all together, but if you’re not about that life, you can use a spatula or a spoon. If you find that your mixture is too wet and it doesn’t hold together add more bread crumbs, about 1 tbsp at a time.

Form your patties like you would with meat burgers, sorry but you'll have to use your hands for this one.

Pour some oil in a frying pan, I usually make sure that the whole thing is covered.

Once your oil is nice and hot, if you’re not sure if it’s hot enough, throw a couple of drops of water in there, if it snaps, crackles and pops, it’s ready.

Add your burger patties, I let them cook for about 2-3 minutes on each side, until they’re brown-ish.

Once they’re done, transfer them to a plate covered with a paper towel or two to absorb the extra oil.

Put in a bun, dress it up and enjoy!
